What follows is tonight's menu. It will not survive the week — the market and the fire see to that. Allergies are welcome with a day's notice; vegetarians eat as well as anyone here.

Seven courses, the whole table. The kitchen cooks one menu each night, for everyone — that is how a single hearth stays honest.

    Baked overnight in the falling heat, whipped raw butter, ash salt

    Buried whole, split, smoked ember oil, flaked salt

    Ardèche trout, vine-smoke beurre blanc, sorrel

    Duck, char and cherry

    Aged Challans duck, deep char, burnt cherry, its own fat

    Monts du Lyonnais tomme, honey warmed at the hearth's edge
